DIY Vegan Salad Bowls

I can’t even tell you how many times in a day I hear, “Mom! What’s for Breakfast(Lunch, Dinner??” I know I am not alone and up until today I have been moonlighting as a short order chef. Today,I had a revelation that maybe I should find an easy solution to making lunch for my 9 yr old. He doesn’t like the conventional PB &J sandwich or sandwiches in general. He likes warm, fancy looking meals. So today I introduced him to the world of warm salad bowls. I figure if I keep some of these items chopped in the fridge ready to go for him, maybe I could check making lunch off of my daily to-do list and stick to making dinner.

Here is what we put in the bowl:

Quinoa & Black Rice

Cucumbers

Spinach

Carrots

Cilantro

Flax Seeds

Vegan Chicken Patty (I would also swap this for tofu or tempeh in the future)

BBQ sauce drizzled on the vegan meat

Cilantro Avocado Dressing (this was super good!) from Primal Foods Kitchen

Still on the hunt for other easy to make “fancy” lunches for kids…let me know some suggestions!
